Greek Zoodles

1 large zucchini
1/2 cup tomatoes, diced
1/4 small onion, sliced
2 Tbsp Feta
1 Tbsp Greek vinaigrette dressing
1 Tsp oil
Salt & Pepper to taste
Sperilli Spiral Veg Peeler

In a medium sauté pan over med/high heat, add the oil and let it get hot.

Add in onion and tomato.

While the onion and tomato sauté, using the peeler, process the entire zucchini into noodle shreds.

Add zucchini "zoodles" to the pan and sauté until softened (about 5 mins)

Remove pan from heat and add remaining ingredients.  Toss to coat and serve.

Dessert for Breakfast

1 Fuji apple, cut into small, bite-sized, pieces
1 banana
2 Tbsp crainins (reduced sugar)
water as needed...couple Tbsp.

(Optional)
1 Tbsp sugar free toffee syrup
Cinnamon to taste
Sugar free cool whip

Bring a skillet up to medium/high heat and add apples.  Drizzle in some water a tablespoon at a time just to simmer in the bottom of the pan (and a little sugar free syrup, if you like).  Once the apples begin to soften (about 5 minutes), add in the bananas and stir gently until they begin to caramelize.

Top with cool whip and cinnamon.
I usually eat this with a protein shake, but you can also serve it over oatmeal.

Orchard Chicken Salad

1 cup shredded rotisserie chicken
1/2 a Fuji apple, diced
1 celery rib, diced
2 Tbsp craisins
1 Tbsp pecans, chopped
1 Laughing Cow Light Swiss cheese wedge
1Tbsp Ken's Lite Ceasar dressing
1 Tbsp Wifked Natural's Caramel Mustard
